As you are moving through the air, the windscreen diverts the air ... the air presses on the sides of the winscreen, hopefully evenly, and helps to stabilize the bike. The effects from gusts, from passing trucks or unkindy weather, are reduced. The degree of reduction, however, may be slight when strong gusts are present.
I think staying alert is the only "trick" concerning gusty conditions.
